I announced on Facebook and Instagram last week that I’m making some big changes in my diet and my lifestyle in preparation for our wedding in June. I’ve joined Weight Watchers Simple Start and I’m beyond excited at how well it’s going so far– even just one week in! I’ve been counting my points and using the various recipes that are provided in the Simple Start app and it’s not so bad after all!
I’ve been pleasantly surprised how easy it’s been to make the Weight Watchers transition. I honestly never pictured myself as a person who would do Weight Watchers, but they really do make it as easy as possible. Plus, so many restaurants and food products have the points listed right on them! It’s so convenient and for those places that don’t, you can easily search them in the app.
I also love how easy the Simple Start app makes my meal planning now. I just whip out the list of recipes that it has for breakfast, lunch, dinner and snacks and sit down with my pen and paper to make a list of items I need to pick up at the grocery store. And if that weren’t simple enough, the recipes are even easier and so healthy, too! I’m really great at snacking healthy, but when it comes to making meals, I always struggle to put together an entire healthy meal!
Here’s a variation of one of my favorite meals that I’ve made from the Simple Start app. I added my own little breakfast twist and used eggs instead of their suggest rice. Talk about a protein punch to start your day, right? It’s absolutely delicious and so incredibly filling. I’m not the greatest about eating breakfast in the morning, but now that I’ve made myself a big ol’ batch of this, I warm some up for myself each morning!
Southwest Beans + Eggs:
1 tsp olive oil
1/8 tsp minced garlic
1/2 cup uncooked red onions
1/3 cup green pepper
1/3 cup orange pepper
1/3 cup red pepper
1/2 cup canned black beans
2 scrambled eggs
1 tbsp cilantro
Heat oil in a medium nonstick skillet over medium-high heat; add garlic and cook, stirring, until lightly browned. Add onions and peppers; saute until tender. Add black beans; cook, stirring, until heated through and then season to taste. Serve over scrambled eggs, garnished with cilantro.
To spice things up a bit I added a dash of Tabasco sauce. I like things spicy, what can I say!
There you have it, my new favorite healthy breakfast recipe. I hope you try it and absolutely love it as much as I do. I’m really excited to continue on this Weight Watchers journey of mine. I already feeling healthier by fitting more fruits and vegetables into my diet and I’m hoping that in June I’ll look fabulous in my wedding dress! It may be a little cliche to attempt these things prior to a wedding, but I really do want to be the best I can be on my big day!
