Ever since moving to Wisconsin, I’ve been shocked at how easy it’s been for me to eat healthier and live healthier. I know it’s due in large part to where we’re located right now– about 30 minutes outside of La Crosse and there’s literally not one fast-food place in our town. It’s kind of refreshing, actually. I put a lot more thought into what I’m buying at the grocery store and what I’m making myself and Alea for breakfast, lunch and dinner.
I tell myself I’m not allowed to leave work during my 30 minute lunch break, so I make sure to pack my lunch every single day. When I pack my lunch I’m even more cautious about what I’m putting in my lunch box.
While, I love getting creative with my meal choices, but sometimes I fall short on ideas. I love getting inspiration from Instagram and blogs from what other people are eating, so I thought I’d share with you a day of healthy meals. That way you can get some ideas, too!
These are just a few of my favorites. And now I’m really craving some spaghetti squash! I never thought it would live up to the hype, but it’s so, so delicious and doesn’t leave me with the guilt that a big plate of pasta does. I can even have seconds!
