It may be “pumpkin spice everything” weather right now and if you’re in the northern parts of the globe, you’re likely starting to experience cooler temperatures, but if you ask me anytime’s a good time for a yummy smoothie. I know, I know, right away in the morning you’re probably reaching for a warm cup of coffee to keep you warm, but once you’re all warmed up I highly recommend you whip up this yummy smoothie. I even shocked myself with how delicious it was!
I used two ingredients that I usually turn my nose up to when it comes to smoothies. Kale and avocado. Boy have I been missing out. I was always worried that the kale would leave too many little pieces and it wouldn’t blend up as well as spinach does and I always just assumed that avocado in a smoothie wouldn’t taste right.
Like I said, I was so, so wrong.
And I’m not afraid to admit that, because truthfully? I’ve found my new favorite homemade smoothie!
001. 1 cup pineapple juice
002. 1/2 avocado
003. 1 banana
004. 1 handful of kale
005. 1/2 cup pineapple
006. 2 packets of Pure Via Stevia (for sweetness)
007. 4 Ice cubes
I personally chose to use canned pineapple because I’m allergic to fresh pineapple. True story. My mouth starts itching something crazy. It’s really sad actually and yes I know I’m missing out on the deliciousness that is fresh pineapple. It’s a sad, sad allergy.
I also added 2 packets of Pure Via Stevia to add a little extra sweet to my smoothie. The pineapple and banana make the smoothie sweet and all, but for someone who’s used to smoothies loaded with strawberries and blueberries, Pure Via helped add that sweetness I’m always looking for in my smoothie.
001. Layer in your ingredients.
002. I started with the pineapple juice, added the bananas and pineapple next, then the avocado.
003. Smoothie maker tip: Put in the kale where it will be closest to the blade of the blender. For my one-cup bullet blender that’s on the top, but if you’re using the traditional blender, then it would be on the bottom. This way it’ll get blended up really well and you won’t be left with chunks of green in your smoothie.
004. Sprinkle in the Pure Via and add 4 ice cubes and blend.
005. Serve in a mason jar… of course!
I don’t know what I was thinking all my smoothie making years. All of the other ingredients mask the avocado’s taste and the texture is spot on. Trust me, it really doesn’t taste anything like kale or guacamole! I promise! You may want to add a little bit of milk or add a little extra pineapple juice if you like a thinner smoothie. This one turns out nice and thick!
