There’s one thing I look forward to more than anything when I go to a Mexican restaurant– the chips and salsa. I mean the food is great and all, but there’s really nothing better than those freshly made tortilla chips and fresh salsa. Nothing better except when they offer guacamole, too. Because I love me some guacamole. Heck, guacamole is half the reason I love Chipotle so much.
You see, I live in a home where my family just doesn’t like guacamole or even avocados for that matter. (I appreciate sympathy cards). It’s a rough life I live, my friends. A rough, rough life.
Want to know something funny though? The two guac-haters in my house whipped up this yummy spicy guacamole recipe just for me! What? I know, it’s just as silly as it sounds! I guess when you talk about your guacamole cravings enough… someone will get the hint!
1. 1/4 cup Mezzetta Jalapeños, diced
2. 4 ripe avocados, mashed
3. 1 red onion, diced
4. 1 garlic clove, minced
5. 2 limes, juiced
1. Combine 4 avocados in a food processor and blend until creamy.
2. Dice up 1 red onion, mince 1 garlic clove and dice 1/4 cup of Mezetta Jalapeños.
3. Mix all of the prepared ingredients into the avocados until thoroughly blended.
4. Squeeze juice from 2 limes and serve.
5. If you do not serve immediately, cover with saran wrap and place in the fridge until ready to serve so avocado does not turn brown.
Advice from Alea: Don’t forget to plug your ears while you use the food processor! That thing is loud!
Holy smokes was this a good batch of guacamole. Especially being made by two people who refused to taste test during the creation of the recipe. I’m thoroughly impressed! No more Mexican restaurant or Chipotle guac for this girl. I just need Cory and Alea to whip up their special recipe for me every now and again!
