I can’t even begin to deny it. I’ve become absolutely horrible at packing my lunch for work. After days and days and weeks and weeks of ordering out and grabbing my lunch from various places throughout the hospital, I need to crack down on not only my food choices, but also my spending. When you really sit down and think about it, lunch isn’t cheap. It may just be 5 bucks, but that’s $25 each week and $25 on not the healthiest of options.
Bringing my lunch was the name of the game when I first started my job in the clinic. I brought my lunch every single day, no questions asked. And then the laziness hit. And I let it get a little out of control. I just needed something to make it a little easier on myself and something that made packing my lunch quicker and maybe even a little more fun.
Enter: Rubbermaid LunchBlox.

Second of all, it’s time to not only start dreaming up lunch ideas for myself, but also for Alea as well. I’ve made it no secret that she’s a picky little eater, so I’m already brainstorming lunch ideas for her to bring to Kindergarten in the fall. (Someone pinch me please!)
Now that I had the gear, it was time to build my lunch recipe arsenal and really start prepping my meals ahead of time with wholesome, healthy ingredients and meals that were yummy heated up or just fine chilled. Here are a few lunch ideas to help get you planning ahead for lunch, instead of scrambling to find the nearest take-out at the last minute…
1. Scrambled Eggs
A friend I work with brought eggs to work one day for breakfast and I couldn’t help but think of her as a genius! (Hi Katie!) I thought I’d make a little scrambled egg skillet and add some onions, orange bell pepper and green bell pepper with a little sriracha sauce for an added kick. Keeping it healthy with mozzarella chunks, raspberries, sugar snap peas, and orange bell pepper on the side!
2. Spicy Sausage and Rice
This is the product of cleaning out my fridge, if I’m just being honest. Spicy natural sausages that were begging to be cooked, red onion, orange and green bell pepper and some asparagus I had leftover from the farmers market the week prior all served over a bed of rice. And to cure my sweet tooth, my favorite coconut yogurt on the side with some raspberries!
3. Loaded Turkey Sandwich
One of my weaknesses at work is this little bistro we have downstairs that has coffee and the most delicious sandwiches. Some days even when I did bring my lunch, I’d succumb to the temptation of their panini of the week and that was the end of it. I knew a good turkey sandwich would help me rise above the panini temptation! This sandwich is turkey, provolone cheese, alfalfa sprouts, tomato, cucumber and spinach leaves. I added the mayo on the side so the bread wouldn’t get soggy as well as some raspberries and bananas served in coconut flavored yogurt. Yum!
All in all, I’d say this little “bring your own lunch” thing has been a serious success. It’s saved me some money, it’s helped me feel a little saner by planning ahead and the LunchBlox by Rubbermaid has made it WAY too easy! And just think how easy this would make packing your little one’s lunch as well?
