When it comes to summertime in our house, we’re all about easy meals that don’t require a whole lot of time in front of the stove. Especially because, as much as I hate to admit it, I’m kind of a cheap skate when it comes to running our air conditioning! So we’re all about grilling outside and making quick and easy, but delicious wholesome meals.
One thing I’ve made recently is this absolutely incredible Italian Bow Tie Pasta Salad. It includes farm stand fresh tomatoes, crisp peppers and a little kick of spice with Mezzetta Peperocinis! Oh my goodness… this is a good one!
1. 1 box Bowtie Pasta
2. Mezzetta Golden Greek Sliced Peperocinis
3. Orange bell pepper, chopped
4. Grape tomatoes, halved
5. 1 cup of sliced black olives
6. 1 cup of feta cheese
7. 2 cups of Italian dressing
1. Cook your bowtie pasta noodles al dente.
2. Let noodles cool and/or run them under cold water.
3. Toss bowtie pasta with all other ingredients listed above in a large mixing or serving bowl.
This pasta salad is perfect to enjoy at your next week night dinner. You can make a bunch ahead of time so you have pasta salad for the week or you can even just bring a big batch to your next barbecue with family or friends. This would also make a delicious recipe to bring up to the cabin or to bring camping! It’s perfect for any or all of your 4th of July plans, wouldn’t you agree?
