Oh the joy of those back-to-school mornings! There’s a kid to be dressed, breakfast to be made, a book bag to be packed, a lunch to throw together, and don’t you dare forget those gym shoes on gym day or the permission slip that needs to be returned! I say this all with a smile on my face and a twinkle in my eye because Cory is usually the lucky one that gets to get Alea out the door to school every morning. Bless his heart!
Today, however, it was my day! I’ve been looking forward to this very day off since Alea started school because it would be the first day I could drop her off at school! And I have to admit, now that she’s a big first-grader, our morning routine is easy as pie! We had her bag all packed and ready to go, I always lay out her outfits for the week, and today (of all days) she decided she was going to eat hot lunch at school. Man did I hit the jackpot! I even had time to prep my Keurig and get my little “work station” set up for when I got home. I plopped my k-cup into my Keurig, whipped up this delicious breakfast parfait, and sat down to blog my morning away.
And in a quiet house, mind you! Talk about perfection!
This breakfast parfait isn’t too complicated to make, but since it brought me such joy this morning, I thought I would share the quick details with you all. It’s so easy, delicious, packed with protein, and not a lot of sugar or calories.
1. Greek yogurt (pick your flavor)
2. Honey Bunches of Oats cereal
3. 1 banana, sliced
1. Layer all of the ingredients as you would for a parfait.
2. Gobble it up in (hopefully) peace and quiet.
Seriously, this breakfast parfait made with Honey Bunches of Oats cereal seriously made my morning. I have cinnamon bark essential oil in my diffuser, a pumpkin spice cappuccino in my mug, this delicious parfait to fill me up, and I can finally get caught up on this here blog and spend a little time on myself. It’s like me-time therapy!
