We’re back at it! If I told you that adjusting to work and being a mother of two hasn’t been hard, I’d be lying. It hasn’t been easy. For the most part, I’m happy to be back to work and back to a routine, but I also miss my girls like crazy when I’m gone all day. I find myself day dreaming about both of them during my pumping breaks and at other times throughout the day. When you’re a mom, you’re a mom full-time whether you work full-time or not!
Thankfully, Mckenna has adjusted to daycare just fine. She’s only had one day where she wasn’t too fond of her bottle, but thank goodness she was back to taking the bottle like a champ the very next day.
Another adjustment I’ve had to make with going back to work, is finding easy lunch ideas I can pack for myself. It has to be something that can easily be heated up in a few minutes, because I take my second pumping break while I eat my lunch. It also needs to be healthy because not only am I wanting to shed a few more baby pounds, but I also am trying to be conscious about what I’m eating while I’m nursing.
This side dish is all of the above and serving it with Progresso Light Chicken Noodle Soup, just makes it even more comforting and filling!
1. 1-zucchini, thinly sliced
2. Pepper, just a pinch
3. 1 cup parmesan cheese
4. 2 tbsp olive oil
1. Preheat oven to 450 degrees fahrenheit
2. On a baking sheet, lay zucchini slices flat and drizzle with olive oil.
3. Sprinkle with pepper and parmesan cheese.
4. Bake for 15-20min. Watch closely so your zucchini doesn’t burn.
5. Serve with a nice warm bowl of Progresso Light Chicken Noodle Soup.
Conveniently, I found all of my ingredients at Walmart. As a busy working mom, I’m not about running to different stores for the things I need and I love that I can grab our personal care products, home items, and our groceries all in one place.
Progresso Light Chicken Noodle Soup is perfect to pour into a container and bring to work. I just have to warm it up in the microwave for a couple of minutes and it’s good to go! Perfect to eat while pumping and I know that I’m getting quality ingredients like antibiotic-free chicken! Grab yours at Walmart next time you’re there!
Side note: This recipe is actually inspired by the delicious zucchini the serve at my work. Yes, I work in a hospital/clinic and yes, their food is actually super good! I don’t have their exact recipe, but judging by how delicious these taste, boy did I get close!
