When I get from work and don’t plan ahead what we’ll make for dinner, I just freeze. My brain doesn’t work and I can’t figure out how to throw a meal together to save my soul. At that point it’s either starve, warm up leftovers if there are any, throw a pizza in the oven OR toss together my new favorite “I don’t know what the heck to cook meal!”
Seriously, if you can throw stuff in a baking dish, you can make this and I’m almost positive you probably have all of these ingredients on hand on any given day. I know we definitely do!
1. Boneless, Skinless Chicken Breasts, thawed (enough for each person– make extra for leftovers)
2. Italian Dressing
3. Italian Seasoning
4. Salt & Pepper
Preheat oven to 450
1. Line baking dish with tin foil for easy clean-up
2. Place thawed boneless skinless chicken breasts in the pan and season with Italian seasoning and salt and pepper.
3. Pour a generous amount of Italian dressing over each chicken breast making sure each is saturated in dressing.
4. Bake for 20min.
Serve with roasted red potatoes and a side salad and you have yourself the perfect, easiest weeknight meal.
I recently learned that if you bake chicken at a higher temperature (450 degrees) for less time (20min) it makes for some seriously juicy chicken. I used to bake this chicken at a lower temp for longer and thanks to the Italian dressing it would still be juicy and delicious, but altering the temp and cook time is EVERYTHING. It’s completely changed how I bake any chicken breast recipe and when it comes to a weeknight dinner, less time is always better!
