My husband gives me a hard time whenever I make this because he just doesn’t understand why I don’t make an actual omelette. Well, the thing is, I’m not one of those talented people who can make an actual omelette. I don’t know what it is, but every time I attempt to make an omelette it just falls apart. This “recipe” has all of the delicious ingredients of an omelette, though, without the disappointment that comes with failing to flip the perfect omelette! I mean, that’s a total win-win in my book!
1. 3 eggs
2. 1/2 cup of chopped onions
3. Handful of mushrooms
4. 1/2 cup of shredded cheese
5. Splash of milk
6. Salt & pepper to taste
In a small bowl, whip together 3 eggs, a splash of milk and the above ingredients. Pour into pan on medium heat. Scramble the eggs and cook the mixture together until the eggs are cooked thoroughly. Serve with an extra dash of pepper and shredded cheese on top. I also added a couple splashes of siracha after I took these photos and it was absolute perfection!
This makes such a good throw-together breakfast recipe for the weekend. I love to treat myself to something other than my usual go-to bowl of oatmeal when I have a little more time to prepare food on the weekends and this recipe is perfect for that! Some people like sweet and syrupy for their breakfast, but I’m all for a savory, flavorful breakfast. Hands down.
