You know what the say, “breakfast is the most important meal of the day,” and honestly I couldn’t agree more. I was never much of a breakfast person, but the Whole30 really changed that for me. I work as a Registered Nurse and need to leave the house by 7am every morning in order to get to work on time. Before then, I also have to get myself ready and make sure both girls are fed and dressed. (Cory takes over from there and takes Mckenna to daycare and Alea to school). Mornings can be a little hectic, so when I was searching for a Whole30 breakfast, I needed something I could just toss into the microwave and call it good.
Egg bakes saved me on the Whole30. I kid you not.
And you better believe I’ll be whipping up an egg bake every week for my January Whole30 as well!
1. 8 eggs, beaten
2. 1 onion, diced
3. 1 package of Whole30 compliant bacon
4. 2 cups of cooked brussel sprouts, quartered
5. 2 cups of sweet potatoes, cubed
6. 1 tbsp garlic powder
7. 1/2 tbsp onion powder
8. salt & pepper to taste
1. Preheat oven to 375 degrees.
2. Cook bacon on the stovetop.
Combine eggs, bacon, vegetables, and spices in a large bowl and mix thoroughly.
Grease 8×8 baking dish with ghee.
Pour egg mixture into baking dish.
Bake for 30 minutes, until edges become golden.
Keep in baking dish covered in refrigerator and heat up slices of your egg bake as needed for breakfasts. Delicious!
And although this egg bake recipes is pretty freaking delicious, my favorite part about whipping up egg bakes is you can make them with whatever you have on hand. I’ve made some with Whole30 compliant chicken apple sausage, some with Whole30 compliant pork breakfast sausage, one with cauliflower I needed to use up in the fridge and one with the leftover chopped onion and peppers from fajita night. You can easily toss in whatever you have on hand, whatever sounds delicious, or customize the ingredients to suit the picky eater in your family.
The best part of egg bakes, though? Very minimal prep with a weeks worth of delicious, high-protein and filling breakfasts as a result. Can I get an amen?
